Sunday Night Licky Club

Tonight's Supper Club was held at Jennifer N's house. We all braved the frigid temperatures for a great meal. The theme this time was a Cooking Light menu, since it's the new year and people are trying to eat better.

I brought the roasted red pepper dip, and for being made with fat free cream cheese and fat free sour cream, it was actually pretty good! I'm always shocked when things that shouldn't be fat free taste good with no fat.

Michele brought two different kinds of homemade bread. One, the pumpernickel (the darker one) was the original bread on the menu, and the other was the famous no-knead bread recipe that's been circulating for a while. It was amazing! The crust was perfectly crusty and the bread had a wonderful airy texture and was moist and delicious.

Kate brought a tasty beet & potato soup. It smelled wonderful, and tasted just as good.

Jennifer N made baked sweet potato fries that had a hint of spice and were really quite good.

Instead of making the cider brined recipe with pork, Jennifer N used chicken thighs, and with the brining they came out nice and juicy.

Dessert was Jennifer's pumpkin cake with cream cheese frosting. It was really good. Everything was really good. I guess eating healthier can taste delicious, too!

After we were all done eating, Jennifer N let her 3 dogs out, and they were so excited to see us, that it turned into a lick-fest!

Kirby liked Michele so much he actually jumped into her lap to give her licks! He's still a puppy at 6 months old.

Mike, the boxer was the real licking champ! He quickly picked Kate as his favorite and tried to lick her as much as possible!

When he wasn't licking Kate, he was busy licking the air.

Sorry I missed it, looks like you all had fun. Feeling a bit better, but looking at those food pix are making me queasy still.

Those recipes look good, got any recommendations? I'm looking for new recipes since it gets old cooking the same things.
